Preheat oven to 350°F and prepare cookie sheets with nonstick spray, parchment paper or silicone mats.
Beat together 2 cups peanut butter (your favorite) and 2 cups granulated sugar till smooth.
Beat in 2 eggs, one at a time.
With wooden spoon, mix in 2 teaspoons baking soda, 1 teaspoon cinnamon, a pinch of salt and 1 teaspoon vanilla extract.
Roll dough into 1-inch balls and place 2 inches apart on cookie sheets. Slightly flatten by pressing a criss-cross with the back of a fork.
Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before storing in an airtight container.
